Morocco is a land of various landscapes, with coastlines on both the Atlantic Ocean and the Mediterranean Sea. It had four mountain ranges, valleys and plains in between, and it ends up in the Sahara Desert at the southern-most end of the country. Rabat is the capital, while Casablanca is the largest city. Rabat is by the coast and that is where I took my inspiration for this meal. I was lucky enough to catch a show about traveling through Morocco on TV and Rabat was one of the featured locations. Imagine entering a marketplace and the first thing you notice are the amazing smells: tangines cooking, preserved lemons, olives, garlic, onion, cumin, paprika, saffron, ginger, cardamom and cilantro. Women would be wearing jellabas, which are hooded robes. One  might have henna on her hands indicating that she may have recently attended a wedding in the family. All around you are fruit and vegetable sellers. Some have orderly stands yet others might just have an oilcloth on the ground. You see okra, baby artichokes, zucchini and tomatoes. A butcher might display kidneys and livers on one side of his stand and tripe on the other side. Beyond is a spice stall with mounds of paprika, tumeric, fennel, cardamom, caraway and saffron. Each neighborhood has several bakeries and pastry shops. Throughout Rabat, each neighborhood has a fruit and vegetable seller. White truffles are sold along the roadside in spring in central Morocco.
I really want to take the time to make another Moroccan dinner because the night I prepared this, Bob and I were preparing to leave for a 4 day trip to Ocean Park, WA. This is a cuisine I definately would like to explore more in depth, as just one meal doesn't even touch the tip of the iceberg. It was fantastic!
My grocery bill for this week came to $15.11, so I was able to put $4.89 into my Beach Bag.
